Tasting Notes 2012

GRAN ESTATE SELECTION 2012
Casablanca Valley

Vineyard: A blend consisting of 91% Syrah, 9% Pinot noir cropped at an average of 4.0 tons per hectare (1.6 tons per acre). Only our finest grapes from our oldest vines are used to make this limited edition wine of which only 570 cases (or 6,800 bottles) were produced.

Harvest: Harvest was carried out by hand on March 28th for the Pinot noir and May 17th in the case of the Syrah.

Vinification: On arrival at the winery all grapes were first subjected to a whole cluster selection. This was followed by destemming (without crushing) and then an individual berry selection before being gravity fed to small stainless steel tanks. A 6 day cold soak (at 5ºC/41ºF) followed after which time the must was warmed and inoculated with selected yeasts and fermented during 15 days (with temperatures peaking at 28ºC/82ºF). During fermentation the tanks were gently punched-down by hand in order to extract the ideal amount of tannin and colour. Following the completion of fermentation the must was subjected to an additional 12 days of post fermentation maceration (to give a total of 33 days total skin contact). The wine was then pressed off skins and put to 67% new French oak barrels for 24 months during which time it was racked twice: once when it was first sulphured (following the completion of malolactic fermentation) and then once again shortly before bottling. The bottled wine was then carefully matured for three months in our cellar prior to release.

Tasting Notes: Deep violet in colour, on the nose lifted notes of lavender, black currant and cedar combine with just a hint of cinnamon. In the mouth rich notes of rum & raisin, leather and black cherry give way to a touch of bitter chocolate on the finish. Rich, silky tannins combine effortlessly with a fresh acidity and abundant mineral notes leading to an elegant, layered finish.

Casablanca Valley

Vineyard : A blend consisting of 91% Syrah, 9% Pinot noir cropped at an average of 4.1 tons per hectare (1.6 tons per acre). Only our finest grapes from our oldest vines are used to make this limited edition wine of which only 600 cases (or 7,200 bottles) were produced.

Harvest : Harvest was carried out by hand between April 18th and May 28th, 2009.

Vinification : On arrival at the winery all grapes were first subjected to a whole cluster selection. This was followed by destemming (without crushing) and then an individual berry selection before being gravity fed to small stainless steel tanks. A 6 day cold soak (at 5ºC/41ºF) followed after which time the must was warmed and inoculated with selected yeasts and fermented during 15 days (with temperatures peaking at 28ºC/82ºF). During fermentation the tanks were gently punched-down by hand in order to extract the ideal amount of tannin and colour. Following the completion of fermentation the must was subjected to an additional 12 days of post fermentation maceration (to give a total of 33 days total skin contact). The wine was then pressed off skins and put to 100% new French oak barrels for 20 months during which time it was racked twice: once when it was first sulphured (following the completion of malolactic fermentation) and then once again shortly before bottling. The bottled wine was then carefully matured for six months in our cellar prior to release.

Tasting Notes : Medium violet in colour. On the nose lifted notes of red currant, bramble and cedar intermingle with just a hint of sweet cinnamon. In the mouth rich notes of rum & raisin, leather and black cherry give way to a touch of bitter chocolate on the finish. Rich, silky tannins combine effortlessly with a fresh acidity and abundant mineral notes leading to an elegant, layered finish.

Casablanca Valley

Vineyard : A blend consisting of 61% Syrah, 26% Merlot and 13% Pinot Noir cropped at an average of 6.1 tons per hectare (2.5 tons per acre). Only our finest grapes from our oldest vines are used to make this limited edition wine of which only 4,500 bottles were produced.

Harvest : Harvest was carried out by hand between April 22nd and May 23rd, 2007.

Vinification : On arrival at the winery all grapes were first subjected to a whole cluster selection. This was followed by destemming (without crushing) and then an individual berry selection before being gravity fed to small stainless steel tanks. A 6 day cold soak (at 5ºC/41ºF) followed after which time the must was warmed and inoculated with selected yeasts and fermented during 15 days (with temperatures peaking at 28ºC/82ºF). During fermentation the vats of Merlot were gently pumped over three to four times daily whilst the Pinot Noir and Syrah were hand plunged in order to extract the ideal amount of tannin and colour. Following the completion of fermentation the must was subjected to an additional 12 days of post fermentation maceration (to give a total of 33 days total skin contact). The wine was then pressed off skins and put to 100% new French oak barrels for 22 months during which time it was racked twice: once when it was first sulphured (following the completion of malolactic fermentation) and then once again shortly before bottling. The finished wine was then carefully matured for six months in our cellar prior to release.

Tasting Notes : Intensely violet in colour, on the nose heady aromas of blackcurrant, blueberry and anise intermingle with lavender and just a hint of sweet cinnamon. In the mouth a very hedonistic flavour profile of black cherry, leather and truffle finishes with just a touch of bitter chocolate. Voluptuous tannins combine effortlessly with a fresh acidity and abundant mineral notes leading to an elegant, layered finish.
