This modern cellar is located in the main part of our vineyards in the Casablanca Valley, with an area of 2,500 square meters. It is well-equipped with the latest technology. Its current capacity is about 1,275,000 liters in stainless steel tanks, with almost a thousand barrels and a storage capacity of approximately 225,000 liters.
We have the best technology for each of the stages of winemaking, all in the same location and under the watchful eye of our winemaking team.
Stainless Steel Tanks
Today, we have 60 stainless steel tanks manufactured by the Italian firm Defrancesqui. These tanks have capacities from 1000 to 50,000 liters. Among them we have 2 opened-topped tanks especially for our Pinot Noir production with a capacity of 9,000 liters, 4 tanks with a capacity of 8,000 liters, and 3 tanks with a capacity of 15,000 liters.
Each tank has been made for red and white wine separately, and has a temperature control system which provides our wines with the best conditions for its development.
Barrique Aging Cellar
In our outstanding barrique aging cellar, in the middle of the darkness, rest our wines
This cellar is equipped with a modern temperature and humidity control system, with temperatures between 14-16 degrees Celsius.
All our barrels are made of fine grain French Oak, selected by our winemaking team, who chooses them thinking about each of our wines, so each comes from a different cooper, forest, grain, and toast, according to the needs of each wine.
Bottling and Labeling Lines
With the latest technology, our line reaches a total number of 2500 per hour. The 4 machines and the tanks were manufactured in Italy.
The Bartolasso machine, a 4-stage monoblock, rinses, cleans and dries the bottle before filling it with wine.
For the packaging and labeling, our machinery delivers the finished product, by rinsing, drying, packaging, and labeling the bottle. All our Private Reserve wines use a tin capsule brought directly from Spain.
