The modern cellar is located at the heart of our vineyard in the Casablanca Valley. With an area of 2,500 square meters, it is highly equipped with the latest winemaking technology. Its current capacity is about 1,275,000 liters in stainless steel tanks, almost a thousand barrels and a storage capacity of approximately 225,000 liters.

We use the most advanced technology at each stage of winemaking, all on the estate and under the watchful eye of our winemaking team.

Stainless Steel Tanks
Today, we have 60 stainless steel tanks manufactured by the Italian firm, Defrancesqui. These tanks have capacities that range from 1000 to 50,000 liters. Among them we have two open-top tanks specially for our Pinot Noir production with a capacity of 9,000 liters, four tanks with a capacity of 8,000 liters, and three tanks with a capacity of 15,000 liters.

Each tank has been made for red and white wine, and has a temperature control system which provides our wines with the best conditions for its development.

Barrel Cellar
In the quiet darkness of the barrel cellar, rest our wines. The cellar is equipped with a modern temperature and humidity control system, with temperatures between 14-16 C.

All our barrels are made of fine grain French oak, selected by our winemaking team, who choose each barrel specifically with each wine in mind. Each comes from a different cooper, forest, and has a different grain and toast.

Bottling and Labelling Line

Our bottling line can bottle a total of 2500 bottles per hour. The four machines, like the tanks, were manufactured in Italy.

The Bartolasso machine, a 4-stage monoblock, rinses, cleans and dries the bottle before filling it with wine.

For the packaging and labelling, our machinery delivers the finished product: it cleans the bottle exterior, drys, places on the capsules and screw caps, and labels the bottle. All our Private Reserve wines use capsules brought directly from Spain.
